Re: What's everyone cooking tonight?
"B"LTC sandwiches, chocolate chip banana bread and spiced cider spritzer.
"B"LTC stands for "bacon" (I use imitation meat bacon), lettuce, tomato and cornbread. I seeded and chopped a few fresh tomatoes and a few strips of imitation bacon strips, fried the "bacon" in the skillet I baked the cornbread in and sauteed the tomatoes in a separate skillet, then mixed the tomatoes and the bacon in the cornbread batter before pouring the entire concoction into the first skillet. After baking it according to the recipe, I cut it into eighths, split one wedge in half horizontally and put in a few fresh lettuce leaves. Might add some whole kernel corn next time (it's a work in progress.)

Re: What's everyone cooking tonight?
"...and we only had Pizza which though deliciously unhealthy at the time, this morning pales into insignificance, and makes me wonder, from the little glimpses I have seen, what someone who can turn a recipe into a mouth watering sonnet could do with words if she put her mind to it" and with that the chameleon goes to make his morning tea, while Phyllis will probably be effortlessly squeezing fresh oranges or making healthy smoothies perhaps "oh and yes" he remembers, grasping at another opportunity "... you wouldn't have a foolproof recipe for a Thai curry would you?"

Re: What's everyone cooking tonight?
I don't squeeze my own oranges or make my own smoothies (I'm not that *plays with toes around the straightjacket straps*) but I drink what I can afford at the time (both physically and financially.) A pot of green tea with honey is a real treat during the cold weather.
Anyway, concerning the Thai curry recipe: I don't have one, but I'm seeing someone* tomorrow that I trade recipes with (I already owe her three recipes, but if I throw in another, I think she'll give me her recipe for Thai curry.) I usually eat Punjabi-style curry (I need to replenish my garam masala) and my tech support team enjoy it sometimes as my method of payment (I have something for them to eat whenever they come over to fix my computer.)

Re: What's everyone cooking tonight?
"Well the Jatsman would be grateful for any curry recipe, no matter from whence it came, a missing item for my culinary armoury then, to impress and persuade..." the chameleon ponders what he can give in exchange, for there must be trade, the spice must flow "...here then, something that has served me well"
"You cannnot be afraid to take risk", and I do like to encourage my little ones, another reminder of the "Litany of Fear" then, which I have used at 2,000 feet above ground, at 400 foot under the sea, on the edge of many a precipice, hanging on by my fingertips, and any other time I felt the fear flow... "
I must not fear.
Fear is the mind-killer.
Fear is the little-death that brings total obliteration.
I will face my fear.
I will permit it to pass over me and through me.
And when it has gone past I will turn the inner eye to see its path.
Where the fear has gone there will be nothing.
Only I will remain.
"... If you can't remember it at the time, just use the first two lines over and over again"

Re: What's everyone cooking tonight?
I spoke with my friend today, and she said she got her Thai curry recipe from a canister of Thai curry from the company that I'm providing a link to. The only thing she pretty much varies is what protein source she includes ("If it doesn't move, it goes in.")
Here's the link to the company's recipes: Thai Kitchen Recipes
Have fun.

Re: What's everyone cooking tonight?
"Well even better" as he scans through the mouth watering list "...certainly put me on the right track, and many others to try, the wok will be well used from now on, many thanks Phyllis"

Re: What's everyone cooking tonight?
Ie.
Anyway, tonight I had a scrambled egg sandwich using a tortilla, pico de gallo "relish" and "hot" guacamole, Buffalo wings-style tofu nuggets and what I call "enchilada rice" (rice finished off with a homemade enchilada sauce that is easier, a bit more versatile and less expensive than getting premade enchilada sauce.) Mint hot chocolate to drink.
Getting ready for a "winter storm" plus finishing off some of the stuff from yesterday's Puppy Bowl (instead of Super Bowl.)
