Default Canning

Greetings,
Tis the season of farmer's markets and harvest. Do any of you can? I've got a pot of crabapples and green apples simmering on the stove now. I made apple butter last Saturday, using green apples, cinnamon, cloves. I'm going to make apple jelly with this batch. There is a raspberry grower that usually comes in the fall to the market; I make a mean raspberry merlot jam.
I got some pickling cucumbers and have a small batch of dill in a crock, and a small batch of 7 day sweets on the counter next to it. I send them to family for Christmas. No one else in the family is really doing that anymore.
Time to watch a movie with my husband... (American comedy, Wild Hogs; we've been through Sturgis during the rally)...

Not really. I tend to freeze things like strawberries.

They had peaches this week, so made peach jam. Also picked up some small red apples from a couple of older gals, had a nice visit with them. I made a batch of apple/peach butter.
I don't really like frozen strawberries, but my mom used to make a strawberry freezer jam that was good. I like them either fresh or smashed up as jam.

My mother still prepares a lot of stuffs for winter, but I must admit I prefer to buy them.

Every year when we was kids my Mother used to make loads of jam, would salt down runner beans, store fruit in syrup, dry peas, the works. It was as though she was preparing for a seige, and every year we used to throw most of it away. The only thing that got used up were the dried mushrooms that got put into those massive pots of stew.
At this point I have to say that there were 11 kids in our family, so cash was tight, but I often wonder how much money was wasted on that sugar that only got chucked in the compost, along with the fruit and stuff, not to mention the fuel bills to produce it all and the hours of hard work she put into it.
Now I still preserve, but with a freezer, no waste at all.
