Default Summer desserts

Strawberry Pretzel Squares

Prep Time: 25 min
Total Time: 4 hr 55 min
Makes: 20 servings, 1 square each

2 cups finely crushed pretzels
1/2 cup sugar, divided
2/3 cup butter or margarine, melted
12 oz. (1-1/2 [ 8-oz.] pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. milk
1 cup thawed COOL WHIP Whipped Topping
2 cups boiling water
1 pkg. (8-serving size) JELL-O Brand Strawberry Flavor Gelatin
1-1/2 cups cold water
1 qt. (4 cups) strawberries, sliced

PREHEAT oven to 350°F. Mix pretzels, 1/4 cup of the sugar and the butter. Press firmly onto bottom of 13x9-inch baking pan. Bake 10 min. Cool.
BEAT cream cheese, remaining 1/4 cup sugar and milk until well blended. Gently stir in whipped topping. Spread over crust. Refrigerate until ready to use.
MEANWHILE, stir boiling water into gelatin in large bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression). Stir in strawberries. Spoon over cream cheese layer. Refrigerate 3 hours or until firm. Cut into 20 squares to serve. Store leftover dessert in refrigerator.

Healthy Living
Trim 2 grams fat per serving by preparing with PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, fat free milk and COOL WHIP LITE Whipped Topping.

Great Substitute
Prepare as directed, using 2 pkg. (4-serving size each) JELL-O Brand Strawberry Gelatin.

Makes: 5 to 7 servings, 1/2 cup each, depending on which fruit is used

Take 1-1/4 cups water and mix & match your recipe from these options...

Crystal Light Low Calorie Soft Drink Mix options

Lemonade * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * *
Ruby Red Grapefruit * * * * * * * * * * * * * * * * * * * * * * * *
Sunrise Classic Orange * * * * * * * * * * * * * * * * * * * * * * * *
Raspberry Ice * * * * * * * * * * * * * * * * * * * * * * * *

fruit choices

1 bag (20 oz.) frozen strawberries
1 bag (16 oz.) frozen peach slices
1 bag (12 oz.) frozen raspberries
1 bag (16 oz.) frozen mixed fruit

Then follow our 2 simple steps:

DISSOLVE contents of 1 tub Crystal Light Low Calorie Soft Drink Mix in 1-1/4 cups water

POUR half of the Crystal Light mixture and half of the fruit into blender container; cover. Blend until smooth, stirring with spoon if necessary. Repeat with remaining fruit and liquid

Tips: For an extra special look, cut 3 oranges in half. Using the tip of the vegetable peeler or small knife, scoop the pulp out of each orange half. Evenly divide granita into orange halves.

Firecracker Cupcakes

Prep Time: 10 min
Total Time: 10 min
Makes: 2 doz. cupcakes or 24 servings, 1 cupcake each

1-1/2 cups BAKER'S ANGEL FLAKE Coconut, divided
4 drops each: blue and red food colorings
24 cupcakes, cooled
2 cups thawed COOL WHIP Whipped Topping
24 red string licorice pieces (4 inch)

PLACE 1/2 cup of the coconut in each of 2 separate resealable plastic bags. Set remaining 1/2 cup coconut aside. Add blue food coloring to coconut in one bag and red food coloring to coconut in second bag. Seal bags; shake until coconut is evenly tinted.
SPREAD tops of cupcakes with whipped topping. Sprinkle with red, white (uncolored) and blue coconuts as desired; press coconut gently into whipped topping to secure.
INSERT licorice piece into top of each cupcake for the "firecracker's fuse."

Tips: Special Extraivide whipped topping into thirds. Color one third with 4 drops red food coloring and second third with 4 drops blue food coloring. Leave remaining whipped topping white. Spread onto cupcakes and continue as directed.

Family Fun: Have children decorate their own cupcakes.

· 1/2 cup butter
· 1 cup white sugar
· 2 eggs
· 1 teaspoon vanilla extract
· 1/3 cup unsweetened cocoa powder
· 1/2 cup all-purpose flour
· 1/4 teaspoon salt
· 1/4 teaspoon baking powder
·
· 3 tablespoons butter, softened
· 3 tablespoons unsweetened cocoa powder
· 1 tablespoon honey
· 1 teaspoon vanilla extract
· 1 cup confectioners' sugar

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
2. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
3. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
4. To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

perfect for a big meal, but i can;t manage more than once a month. to rich

You know granita is good between meals to help digestion ? At least, that's what italians believe. I agree with them it's refreshing.

That receipe of brownies sounds delicious, Princess. :smilie:

not for a while, they really are very rich. i couldn't face them again. she wants them every day, as i said, about once a month is enough. i'm still high from sunday! (on chocolate btw)
